Morning Reds

We had red skies this morning!  I must admit they looked so interesting --- peeking through my red gingham curtains! I was too asleep to get that photo, though! My new sleep schedule is unmentionable! I'll just put it in with a long, very long, line of things I want to do better!
Plans are in the works to have a large Thanksgiving dinner here with my cousins.  Bring on the green bean casserole!
My sweet friend of nearly 50 years has been moved to a rest home for her own well-being. I have been trying to comfort and encourage her, but many phone calls just don't seem to cut it.  I mean, seriously,  would I be a solid choice to add merriment to a situation? That's a fiasco waiting to happen, if you ask me! 
I have officially started Christmas shopping and decorating. I didn't want to wait until after the Thanksgiving party! This same bunch was here for a Fall party already! So let's bring on the holiday season.  
I have some great (or they sound great) recipes to make. Here is my favorite pumpkin bread.  Really moist and delicious. 
It's from Jenny Penton at Planner Perfect. I fall on the encouragement of Jenny! She's wonderful! She writes,

"This pumpkin bread is so moist and full of all the smells and aromas of fall. The cinnamon, cloves and pumpkin waft through the kitchen making everyone waiting in anticipation for the first slice!"

  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups white sugar
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7×3 inch loaf pans.
  2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
  3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean. I don't add raisins or chocolate chips or pecans, but you can. I have made muffins with some of the batter. Delish!Have a nice week! Sailors, take warning!
