As promised

Norma's Sunshine Lemon Bars

Crust:

2 c. flour
1/2 c. powdered sugar
1 c. butter

Cut butter in to dry ingredients. Press into 9 x 13 inch pan. Bake 20-25 minutes at 350 degrees.


Filling:

4 eggs
2 c. sugar
1/3 c lemon juice
1/4 c. flour
1/2 t. baking powder

Beat filling ingredients together and pour over hot crust. Bake 20-25 minutes more at 350 degrees. Let cool and sprinkle with powdered sugar and cut into bars.

I've never made it with powdered sugar in the crust but I am for sure going to try it now! Actually I have a bunch of lemons from my boyfriend's grandma's tree that need to be used up so this recipe came at the perfect time! Thanks so much :)

Hey! I just wanted to tell you I tried these on Sunday and WOW. My boyfriend LOVED them better than other recipes I've made. His favorite part the crust LOL. Because it turns out so flaky when you cut the butter into the flour and sugar. Congrats, you got him to go off his diet and he ate a bunch of them haha. I am definitely keeping this recipe. Thanks!
